It's been said that kale is sooooo last year, but it's still a staple in our house. Don't give in to the kale haters!  I use it raw in my green juice, but I also really enjoy it cooked just slightly, so it turns bright green, and added to a salad. Groovy Rainbow Salad

Oh man, the grey days ... I need a sun intervention, or extra Vitamin D, and pass the Omega 3's!! This salad is "groovy," and it says "sunny" to me!! The base of the salad is raw, thinly sliced, purple cabbage with soft, juicy mango added and dressed with lime. This colorful salad keeps well. Colorful Cauliflower | Roasted Cauliflower Lemon Thyme Quinoa

Toward the end of the Farmer's Market season I always expect to see one of my favorites - colorful cauliflower (orange and purple). On a farmer's market "field trip" in October, Nacho and I spotted the orange ones. He hadn't tasted one yet, and the farmer offered him a taste - he liked it!
