I began tweaking a Green Drink for myself last summer…think farmer’s market and the bounty of harvested vegetables. After a few months of watching me drink my concoction, RB decided to give it a try.

He became a believer! He said it was his Energy Boost. I use Green Drink as an addition to my meal – making sure to get extra veggies in my day. RB uses the drink as an Energy Boost between meals.

You will need:

  • 2 cups arugula {I stuff the arugula into the measuring cup}
  • 4 stalks celery, cut
  • a handful of baby carrots
  • 1 apple, cut
  • 1/2 cucumber, cut lengthwise
  • 4-5 roma tomatoes or approximately 14 oz canned tomatoes
  • 1 inch piece ginger, peeled and cut in half
  • 1 lime juiced
  • 1/2 lemon juiced
  • 1 cup purified water
  • hot sauce, salt and pepper to taste

Here’s how:

Place arugula, celery, cucumber, carrots, apple, tomatoes and ginger root into colander and rinse.

I add the liquids into my VitaMix first. I then add the remainder of ingredients ending with arugula, my “to taste” items, and blend. Recipe yields approximately 7 cups. {Please follow your blender handbook instructions. You may need to chop ingredients into smaller pieces before blending if not using VitaMix}

I pour a glass for myself and pour the remainder of the recipe into small Mason jars. I keep these in the refrigerator for us to drink throughout the week. The drink will thicken as it sets. I add a little purified water to the drink, stir and take with me on the go or pour into a nice glass to drink at home.

If you love the idea of an Energy Boost – Green Drink, but fancy something a little sweeter – add a banana or use apple juice in place of water. Blueberries sound fantastic! The possibilities for Green Drink-inspired concoctions are unlimited!
