Happy January | National Oatmeal Month

I couldn’t let it pass without posting our oatmeal breakfast. I know – it’s just oatmeal, but it ought not go unnoticed! Toasty oatmeal is a regular at our house. It’s warm, satisfying and simple to make. I make a batch and reheat throughout the week.

You will need:

  • 1 cup rolled oats
  • a pinch of salt
  • 2 cups water

Here’s how:

Stir ingredients together and bring to a boil. Reduce heat to a steady simmer. Allow to cook 10 minutes – stirring occasionally.

After 10 minutes – remove from heat – cover pan with lid. Allow oatmeal to set off heat and covered 10 minutes.

Remove lid – add almond milk {or milk} and brown sugar. I stir to a medium thickness and spoon into bowls for breakfast – topping with bananas, cranberries, or toasted nuts.

I store the remaining oatmeal in the refrigerator to use throughout the week for a quick and healthy breakfast. The oatmeal will thicken as it sets. I add more almond milk {milk} to desired consistency in individual bowls and reheat – then add toppings.
