This is the Bueno take on potato salad. My food memory of old-fashioned, summer, church potluck potato salad is brought back by RB’s Farmer’s Market Potato Salad. He adds in our preference for loads of celery, onions, garlic and parsley with minimal dressing to hold it all together. And there you have it!! Once I see Yukon Gold potatoes at the market, I expect RB will be making his potato salad for me soon. I recently visited my local Old Capitol Farmer’s Market to get the ingredients for RB’s Farmer’s Market Potato Salad. My favorite farm for Yukon Gold Potatoes and green onions is Zoey’s Herb Farm. I loved the garlic from Sally’s Fields and flat leaf parsley from Hamilton Farm!

RB’s Farmer’s Market Potato Salad

  • 3 pounds potatoes {Yukon Gold potatoes are our favorite}
  • 4 ounces chopped onions {farmer’s market small onions}
  • 3 – 4 stalks chopped celery
  • 2 cloves minced garlic
  • a bunch of parsley
  • 12 ounces mayonnaise
  • 4 ounces Dijon mustard
  • fresh squeezed lemon juice {1/2 lemon}
  • salt and pepper to taste {RB adds a little hot sauce, but can absolutely be left out if preferred}
Reuben cooks the potatoes ahead of time and refrigerates. Once potatoes are cold, quarter them and add all other ingredients – mix and refrigerate. Any of these amounts may be altered for your preferences or food memories. Enjoy!
